Called "birds nests" or "grandma's bracelets" in English, these little circles of rolled phyllo filled with walnuts and topped with rose syrup are a treat in both flavor and texture. Made in-house.

Kunafeh variations abound around the Arab world; some kunafeh is in sheet pans and cut into servings after baking; others are rolled into serving size and nestled together in a pan before baking. Some are filled with a salty firm cheese like mozarella; others with more tender and sweeter cheeses like ricotta, mascarpone, an Arabic version of clotted cream called "ashta", or a hyperlocal Palestinian cheese called "nabulsi". Some use rose syrup for topping; others use orange blossom syrup; still others use a mixture of both. All of them share a crispy kataifi pastry (aka shredded phyllo) layer outside. Our version is individual rolls of kataifi with a ricotta center, topped with rose syrup and pistachios. Best served warmed briefly to at least room temperature (microwave or oven is fine). Made in-house.
